Alaskan Blueberry Coffee Cake

To be completely honest, I do not know how this cookbook made it way into my cookbook collection. I truly do not remember buying so I am sure it was passed down to me by my aunt. I do not think I have given it as much attention as I should. 

You see, it is blueberry season and we went blueberry picking. We picked over 11 pounds of fresh Florida blueberries and will be making blueberry recipes for years, haha. When searching for blueberry recipes, I was shocked by the limited amount of published recipes. However, in my search I discovered this little gem. This cookbook is filled with 1700 of an incredible collection of sweet morning breads, inviting comfort foods, and delicious desserts taken from America's finest inns and B&Bs.

1 1/2 cups all-purpose flour                            2 1/2 teaspoons baking powder
3/4 cup sugar                                                               1 teaspoon salt
1/4 c vegetable oil                                                        3/4 cup milk
1 egg                                                                      1 1/2 cups fresh blueberries
Crumb Topping:
1/3 cup all-purpose flour                                              1/2 cup brown sugar, firmly packed
1/2 teaspoon cinnamon or more                                   1/4 cup firm butter

In a medium bowl, blend together 1 1/2 cups flour, sugar, baking powder, salt, oil, milk, egg,  and 1 cup blueberries. Beat throughly for 30 seconds and spread in a greased 8x8x2 pan. 

Combine 1/3 cup flour, brown sugar, cinnamon, and butter. Sprinkle over batter and top with remaining berries.

Bake in a pre-heated 375 oven for 25 to 30 minutes, until done. Don not over bake.
Serve warm with butter or honey.
