Well, of course I have Southern living cookbook. I have plenty. And of course, just like all my other cookbooks, I rarely cook from them. I posted readers to tell me their favorite cookbooks.This post is dedicated to a dear friend, Miss Kathy, who stated Southern living cookbook was her favorite.

I chose this recipe to make for my son's teacher as this week is Teachers Appreciation Week.

With a name like orange muffins, I am imagining this lite, moist, and citrusy muffin. However, this was anything but. The recipe calls for 20 minutes of baking time. However, when I went to take them out, after baking for 20 minutes, they were hard as a rock. I would recommend baking for only 15 minutes. While expecting a nice delicate orange flavor, it was a more robust spice flavor with barely any hint of orange. I enjoyed the spice however not when you are selling it as orange flavored! Haha! Also, another issue I had was the muffins did not rise. Of course, Mr. Cookbook Queen and myself still allowed ourselves to enjoy the dense, small, over baked, spiced muffins. Being the picky cook that I am, I could not pass these on to the little one's teacher. So, a candle she was given.

*****I still recommend this recipe however adjust accordingly.

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2cup golden raisins
1 egg, beaten
1/2 cup milk
1/4 cup vegetable oil
1 teaspoon grated orange rind
1/4 cup orange juice
1 teaspoon orange extract

Combine flour, baking powder, sugar, cinnamon, allspice, and raisins in a large mixing bowl; make a well in the center of the mixture. Combine egg and remaining ingredients; add to dry mixture, stirring just until moistened.

Spoon batter into greased muffin pans, filling two-thirds full. Bake at 400° for 20 minutes. Remove  muffins from pans immediately.

 Makes 13 muffins
